Instructions

  1. Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper or grease lightly.
  2. In a large bowl, mash the bananas until smooth.
  3. Stir in eggs, maple syrup (or honey), and vanilla extract until well combined.
  4. In a separate bowl, whisk together almond flour, baking powder, baking soda, cinnamon (if using), and salt.
  5. Gently fold the dry ingredients into the wet mixture until just combined—do not overmix.
  6. Fold in the chocolate chips, saving a few for the top if desired.
  7. Pour batter into the prepared loaf pan and smooth the top. Sprinkle extra chocolate chips on top.
  8. Bake for 50-60 minutes, checking at 45 minutes. Tent with foil if browning too quickly. Bread is done when a toothpick comes out mostly clean.
  9. Let cool in the pan for 20 minutes, then transfer to a wire rack to cool completely before slicing.
