Ingredients

  • 1 tablespoon sesame oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 6 cups chicken or vegetable broth
  • 3 tablespoons soy sauce (or tamari)
  • 2 carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 6 oz rice noodles (or soba, ramen, or udon)
  • Salt and pepper to taste
  • Optional toppings: green onions, cilantro, lime wedges, soft-boiled egg, sesame seeds

Instructions

  1. Heat sesame oil in a large pot over medium heat. Add garlic and ginger, and sauté until fragrant (about 1 minute).
  2. Pour in broth and soy sauce. Bring to a simmer.
  3. Add carrots and bell pepper; cook for 5–7 minutes until just tender.
  4. Add noodles and cook according to package instructions (usually 3–4 minutes).
  5. Taste and adjust seasoning with salt, pepper, or a splash of lime juice.
  6. Serve hot, topped with green onions, cilantro, and other desired toppings.

Notes

Store broth and noodles separately for best leftovers. Add shredded chicken, tofu, or bok choy for variation. Spice it up with sriracha, chili oil, or crushed red pepper.
