  • 2 sheets puff pastry, chilled
  • 2 cups cooked chicken, shredded or diced
  • 1 cup grated cheese (cheddar, Gruyère, or mozzarella)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1/2 cup cream or béchamel sauce
  • 1 teaspoon thyme (dried) or 2 teaspoons fresh
  • 1 egg, beaten (for egg wash)
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Keep puff pastry chilled.
  2. In a skillet, melt butter over medium heat. Sauté onion until soft; add garlic and cook 30 seconds.
  3. Stir in chicken, cream or béchamel, thyme, salt, and pepper. Cook 2–3 minutes. Remove from heat and fold in cheese. Let mixture cool to lukewarm.
  4. On a lightly floured surface, roll out puff pastry sheets to smooth seams. Place one sheet on the prepared tray.
  5. Spoon the cooled filling down the center, leaving a 1-inch border. Brush edges with a little egg wash.
  6. Top with the second pastry sheet. Press edges to seal, then crimp with a fork.
  7. Cut even slits across the top (the classic “jalousie” vents) to release steam. Brush top with remaining egg wash. Optional: sprinkle sesame seeds or grated Parmesan.
  8. Bake 20–25 minutes until puffed and deep golden, with melted cheese peeking through the vents.
  9. Rest 5 minutes before slicing. Serve warm with a green salad or soup.

Notes

Keep puff pastry cold for best lift; chill assembled jalousie 10 minutes before baking if the kitchen is warm. Cool filling slightly before assembling to prevent soggy pastry.
