Ingredients

Scale
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 2 cups milk (whole or 2%)
  • 2 cups shredded cooked chicken (rotisserie works great)
  • 3 cups broccoli florets, chopped
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • Optional: 1/4 cup heavy cream for extra richness

Instructions

  1. In a large pot, melt butter over medium heat. Add onions and sauté until soft and translucent.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle in flour and whisk continuously for 1–2 minutes to form a roux.
  4. Slowly whisk in chicken broth, then add milk gradually while stirring until smooth and thickened.
  5. Stir in mustard powder, paprika, salt, and pepper.
  6. Add broccoli florets and simmer for 8–10 minutes until tender but still bright green.
  7. Reduce heat to low and gradually stir in shredded cheddar cheese in small handfuls until melted and creamy.
  8. Fold in cooked chicken and let simmer for 5 minutes so the flavors blend.
  9. Taste and adjust seasoning as needed.
  10. Serve hot, topped with extra cheddar or croutons, and enjoy with warm bread.

Notes

Avoid boiling after adding cheese to prevent curdling. For thicker texture, blend half the soup before adding chicken. Broccoli stems can be peeled and chopped for extra sweetness. To make it gluten-free, use cornstarch or gluten-free flour instead of all-purpose. Store leftovers up to 3 days and reheat gently with a splash of milk or broth.
