Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 pound boneless, skinless chicken breasts or thighs, diced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, avocado, sour cream, lime wedges, chopped cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and garlic and sauté until softened and fragrant.
  2. Add diced chicken and cook until lightly browned.
  3. Stir in chili powder, cumin, and smoked paprika. Cook for 1 minute to bloom the spices.
  4. Add tomatoes, beans, corn, and chicken broth. Stir well and bring to a simmer.
  5. Lower heat and simmer uncovered for 25–30 minutes, stirring occasionally.
  6. Season with salt and pepper to taste. Serve with your favorite toppings.

Notes

For extra richness, stir in a spoonful of tomato paste or add a pinch of chipotle in adobo. Leftovers taste even better the next day and freeze well for up to 3 months.
