Ingredients

  • 1.52 lbs flat iron steak
  • 3 tablespoons fresh lime juice
  • Zest of 1 lime
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 11.5 teaspoons chili powder or 1 fresh chili, finely chopped
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1/2 teaspoon smoked paprika

Instructions

  1. In a small bowl, whisk together lime juice, lime zest, olive oil, minced garlic, chili powder (or fresh chili), honey, salt, pepper, and smoked paprika if using.
  2. Place flat iron steak in a zip-top bag or shallow dish. Pour marinade over steak, ensuring all sides are coated. Marinate in the refrigerator for at least 30 minutes, preferably 2–8 hours.
  3. Remove steak from marinade, letting excess drip off. Preheat grill or skillet to medium-high heat.
  4. Grill or sear steak for 4–5 minutes per side for medium-rare, turning once for good caramelization and grill marks. Use a thermometer for accuracy: 130°F for medium-rare, 140°F for medium.
  5. Transfer steak to a cutting board and let rest for 5 minutes.
  6. Slice thinly against the grain. Serve on a platter with juices, fresh cilantro, and lime wedges.
  7. Optional: Serve with tortillas, slaw, avocado, rice bowls, or a crisp salad for extra flair.

Notes

You can adjust chili for desired heat. Flat iron steak absorbs marinades beautifully and stays juicy, but flank or skirt steak work too. Marinade also works with chicken, shrimp, or tofu. Leftovers are perfect for tacos, salads, or sandwiches.
