Ingredients
- 6–8 cups cornbread, crumbled (day-old preferred)
- 4 tablespoons butter, plus more for topping
- 1 medium onion, diced
- 2–3 celery stalks, chopped
- 2–3 garlic cloves, minced
- 1–2 tablespoons chopped fresh sage
- 1 teaspoon fresh thyme
- ½ teaspoon rosemary
- 2 cups chicken or turkey broth
- 1 egg, lightly beaten
- Optional: 1 cup cooked sausage, ½ cup dried cranberries, ½ cup toasted pecans
- Salt and pepper, to taste
Instructions
- Preheat oven to 350°F (175°C). Grease a large casserole dish and set aside.
- In a skillet, melt butter over medium heat. Add onion, celery, and garlic; sauté for 6–7 minutes until softened. Stir in sage, thyme, and rosemary. Let cool slightly.
- In a large bowl, combine crumbled cornbread and sautéed vegetables. Add optional sausage, cranberries, or pecans if desired.
- In a separate bowl, whisk together broth and egg. Pour over the cornbread mixture and toss gently to combine. Add more broth if needed — mixture should be moist but not soggy.
- Transfer to prepared dish. Dot with butter. Cover with foil and bake 25 minutes, then uncover and bake another 15–20 minutes until golden and crisp on top.
Notes
Use day-old cornbread for best texture. You can assemble this dish ahead of time and bake just before serving. Leftovers reheat well and can be frozen for up to 2 months.
