Ingredients

  • 3 1/2 teaspoons baking powder
  • 1 tablespoon granulated sugar

  • 1 1/4 cups whole milk (or buttermilk)

  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Butter or oil for greasing skillet

Instructions

  1. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  2. In another bowl, beat together milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry and gently fold until just combined. Do not overmix — a few small lumps are fine.
  4. Let the batter rest for 5 minutes while you heat your skillet over medium-low heat.
  5. Grease the skillet lightly with butter or oil. Pour about 1/4 cup of batter for each pancake onto the hot skillet.
  6. Cook until bubbles form on the surface and the edges begin to set, about 2 minutes.
  7. Flip gently and cook the other side for another 1–2 minutes until golden and cooked through.
  8. Repeat with remaining batter, keeping finished pancakes warm under a towel or in a low oven.
  9. Serve hot with your favorite toppings.

Notes

For extra fluffy pancakes, use half buttermilk in place of milk and don’t skip resting the batter. Leftovers freeze well — just reheat in toaster or skillet.
