Ingredients

  • 10 oz fresh baby spinach (or frozen, thawed and drained)
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1/2 red onion, sliced
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 8 oz Greek feta cheese, crumbled or cut into chunks
  • 2 tablespoons chopped fresh dill or parsley
  • 1/8 teaspoon ground nutmeg (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss red pepper, zucchini, and red onion with olive oil, oregano, salt, and pepper. Spread on a baking sheet and roast for 15–20 minutes until slightly caramelized.
  3. In a large bowl, combine spinach, roasted vegetables, dill or parsley, nutmeg (if using), and feta. Drizzle with olive oil and gently mix.
  4. Transfer the mixture to a greased baking dish and spread evenly.
  5. Bake uncovered for 25–30 minutes until top is golden and edges are crisp.
  6. Remove from oven and let cool slightly before serving. Drizzle with olive oil and garnish with fresh herbs if desired.

Notes

To make ahead, assemble the dish and refrigerate for up to 24 hours before baking. Try adding orzo, quinoa, or roasted sweet potatoes for a heartier version.
