  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 2 teaspoons Cajun seasoning (plus more for garnish)
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and black pepper, to taste
  • 2 cups heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 12 oz penne or fettuccine pasta
  • 1/2 cup reserved pasta water (as needed)
  • Chopped fresh parsley, for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and reserve 1/2 cup of the pasta water. Set aside.
  2. In a bowl, season chicken with Cajun seasoning, paprika, cayenne, salt, and pepper. Toss to coat evenly.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook until golden and cooked through, about 5–6 minutes. Remove from skillet and set aside.
  4. Reduce heat to medium. In the same skillet, add butter and minced garlic. Sauté for 1–2 minutes until fragrant.
  5. Pour in heavy cream and stir to deglaze the pan, scraping up any browned bits.
  6. Add mozzarella and Parmesan cheeses gradually, stirring until the sauce is smooth and creamy.
  7. Return cooked chicken to the pan. Add pasta and toss to coat everything evenly in the sauce.
  8. If sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  9. Sprinkle with additional Cajun seasoning and garnish with chopped parsley.
  10. Serve warm with extra cheese on top if desired.

Notes

For a baked version, top with more shredded cheese and broil for 2 minutes until bubbly and golden. Adjust the spice level by reducing or increasing cayenne.
