- 12 oz gluten-free fettuccine or brown rice pasta
- 2 boneless skinless chicken breasts (or thighs)
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 1/4 cups heavy cream (or half-and-half for lighter)
- 1 1/4 cups freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley, plus more for garnish
- Optional: 1 cup baby spinach, steamed broccoli, or sautéed mushrooms
Instructions
- Cook gluten-free pasta according to package instructions. Test early and cook until just al dente. Drain, rinse briefly, and toss with a drizzle of olive oil to prevent sticking.
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove, let rest, then slice into strips.
- In the same skillet, melt butter. Add minced garlic and cook until fragrant, about 1 minute.
- Pour in heavy cream. Simmer gently for 2–3 minutes to thicken slightly.
- Whisk in Parmesan cheese gradually until sauce is smooth and creamy.
- Add sliced chicken and cooked pasta to the skillet. Toss until everything is coated in Alfredo sauce. Add a splash of reserved pasta water if sauce is too thick.
- Stir in parsley and optional veggies if using. Taste and adjust seasoning.
- Serve immediately, topped with more Parmesan and fresh parsley.

For dairy-free, use coconut cream and vegan Parmesan. Add veggies like spinach, broccoli, or mushrooms for extra flavor and nutrition. Leftovers keep 2 days—reheat gently with a splash of milk or broth.
