- 1/2 cup granulated sugar or honey

- 1/4 cup Greek yogurt or applesauce
- Zest of 1 large orange
- 1/4 cup fresh orange juice
- 1 tsp vanilla extract (optional)
- 1 1/4 cups finely grated zucchini (pressed dry with towel)
- Optional: 1/2 cup chopped walnuts, pecans, or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
- In a large bowl, whisk together gluten-free flour, almond/oat flour, baking soda, baking powder, salt, and cinnamon.
- In another bowl, whisk eggs, sugar/honey, oil, Greek yogurt/applesauce, orange zest, orange juice, and vanilla until smooth.
- Add the wet ingredients to the dry and stir just until combined.
- Fold in the grated, pressed-dry zucchini (and nuts or chocolate chips, if using) until evenly distributed—don’t overmix.
- Spread batter evenly in the prepared loaf pan.
- Bake 45–55 minutes, or until a toothpick inserted in the center comes out clean with a few moist crumbs.
- Cool in pan 10 minutes, then transfer to a wire rack to cool completely before slicing.
- Store in an airtight container at room temperature up to 2 days, refrigerate for a week, or freeze individual slices for longer storage.
Notes
Squeeze zucchini well so the bread stays fluffy, not soggy. For extra citrus punch, zest the orange right over your mixing bowl. Add-ins like chocolate chips or nuts make it extra special for kids and guests!
