  • 1/4 cup Greek yogurt or applesauce
  • Zest of 1 large orange
  • 1/4 cup fresh orange juice
  • 1 tsp vanilla extract (optional)
  • 1 1/4 cups finely grated zucchini (pressed dry with towel)
  • Optional: 1/2 cup chopped walnuts, pecans, or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
  2. In a large bowl, whisk together gluten-free flour, almond/oat flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, whisk eggs, sugar/honey, oil, Greek yogurt/applesauce, orange zest, orange juice, and vanilla until smooth.
  4. Add the wet ingredients to the dry and stir just until combined.
  5. Fold in the grated, pressed-dry zucchini (and nuts or chocolate chips, if using) until evenly distributed—don’t overmix.
  6. Spread batter evenly in the prepared loaf pan.
  7. Bake 45–55 minutes, or until a toothpick inserted in the center comes out clean with a few moist crumbs.
  8. Cool in pan 10 minutes, then transfer to a wire rack to cool completely before slicing.
  9. Store in an airtight container at room temperature up to 2 days, refrigerate for a week, or freeze individual slices for longer storage.

Notes
