  • 2 tablespoons cornstarch, arrowroot, or potato starch
  • 2 tablespoons avocado oil, grapeseed oil, or light olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon sea salt, plus more for serving
  • Fresh herbs (like parsley or dill), chopped, for garnish

Instructions

  1. Peel (optional) and cut sweet potatoes into sticks about 1/4 to 1/2 inch thick for even cooking.
  2. Soak the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch.
  3. Drain and dry sweet potato sticks thoroughly with a clean towel.
  4. Toss fries with cornstarch (or arrowroot/potato starch) to coat lightly and evenly.
  5. Add oil, smoked paprika, garlic powder, cayenne (if using), and sea salt. Toss until well coated.
  6. To Bake: Preheat oven to 425°F (220°C). Spread fries in a single layer on a parchment-lined baking sheet. Bake 15 minutes, flip, and bake another 10–15 minutes until golden and crisp at the edges.
  7. To Air Fry: Preheat air fryer to 400°F (200°C). Arrange fries in a single layer, air fry 15–20 minutes, shaking halfway through, until crisp and golden.
  8. To Pan Fry: Heat 1/4 inch oil in a heavy skillet over medium-high. Cook fries in batches, turning, until golden and crisp. Drain on a rack or paper towels.
  9. Season immediately with extra salt and garnish with fresh herbs. Serve hot with your favorite dipping sauces.

Notes

For extra crispy fries, don’t skip the soaking and drying step. Serve with gluten-free dips like Greek yogurt-lemon-dill, chipotle mayo, or honey mustard. Leftovers reheat best in the oven or air fryer. Freeze cooled fries in a single layer, then store in a freezer bag; reheat from frozen for best crispiness.
