  • lbs boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons red wine vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 cups cooked rice, quinoa, or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup kalamata olives
  • 1/2 cup crumbled feta cheese
  • Tzatziki sauce, for serving
  • Fresh parsley or dill, for garnish

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, vinegar, garlic, oregano, paprika, salt, and pepper.
  2. Add chicken and toss to coat. Cover and marinate in the fridge for at least 2 hours, or overnight for best flavor.
  3. Heat a grill or grill pan over medium-high heat. Cook chicken pieces for 4–5 minutes per side until golden and cooked through.
  4. Prepare rice or grains and chop vegetables while chicken cooks.
  5. Assemble bowls: add rice to the base, then layer with grilled chicken, cherry tomatoes, cucumbers, olives, and feta.
  6. Top with a generous dollop of tzatziki and garnish with herbs. Serve immediately.

Notes

Marinate the chicken the night before for easy prep. To lighten things up, serve over greens instead of grains. Each bowl can be customized with your favorite veggies or add-ins like hummus or roasted veggies.
