  • 1 1/2 pounds ground chicken (mix of white and dark meat recommended)
  • 1 large egg, beaten
  • 1/3 cup plain breadcrumbs (plus extra if needed)
  • 1/4 cup Greek yogurt
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil, for brushing grill
  • Burger buns, for serving
  • Optional toppings: sliced tomato, lettuce, pickles, cheese, tzatziki, mustard, avocado, sautéed mushrooms, roasted red peppers

Instructions

  1. In a large bowl, gently mix ground chicken, egg, breadcrumbs, Greek yogurt, feta, parsley, garlic, Dijon mustard, smoked paprika, salt, and black pepper until just combined. Do not over-mix.
  2. With wet hands, shape the mixture into 4–6 patties about 3/4-inch thick. Place patties on a tray and refrigerate for at least 20 minutes to help them firm up.
  3. Preheat your grill to medium-high (about 400°F). Brush grates with oil to prevent sticking.
  4. Grill chicken burgers for 5–6 minutes on the first side. Flip gently and grill another 4–5 minutes, or until the internal temperature reaches 165°F.
  5. Transfer burgers to a plate and let them rest a few minutes before serving.
  6. Serve on toasted buns with your favorite toppings such as lettuce, tomato, pickles, cheese, tzatziki, or any creative add-ons.

Notes

For extra juiciness, use a mix of dark and white ground chicken. If the mixture feels too wet to shape, add more breadcrumbs a tablespoon at a time. Chill the patties before grilling for the best texture. These burgers can also be frozen before cooking for up to 1 month (separate with parchment).
