Description

Juicy, vibrant grilled lemon herb chicken thighs marinated in fresh lemon, garlic, and herbs—a true family tradition that brings sunshine to your table, whether it’s a weeknight dinner or a backyard barbecue.

Ingredients

Scale
  • 2 lbs (about 8) bone-in or boneless skinless chicken thighs
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1/3 cup extra-virgin olive oil
  • 3 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh oregano (or 1 tbsp dried oregano)
  • 1 tbsp chopped fresh thyme (or 1/2 tbsp dried thyme)
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • Lemon wedges and extra herbs, for serving

Instructions

  1. In a bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, parsley, oregano, thyme, salt, and pepper.
  2. Add chicken thighs and toss to coat well. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
  3. Preheat grill to medium-high heat. Oil the grates to prevent sticking.
  4. Place chicken thighs on the grill, skin side down if using skin-on. Grill without moving for 4-5 minutes until nicely seared.
  5. Flip and continue grilling another 4-6 minutes, or until the internal temperature reaches 165°F (74°C) and juices run clear.
  6. Transfer to a plate and let rest 5 minutes. Squeeze fresh lemon juice over top and sprinkle with extra herbs before serving.

Notes

For the juiciest results, don’t skip marinating time. Skin-on thighs add extra flavor and moisture, but boneless/skinless work just as well—just reduce grilling time slightly. Leftovers are great for wraps, salads, or sandwiches. Let chicken rest before serving to lock in juices.
