- 1 ½ lbs boneless, skinless chicken breasts, cut into 1 ½-inch pieces
- 1 fresh pineapple, peeled, cored, and cut into 1 ½-inch chunks
- 1 large red bell pepper, cut into 1 ½-inch pieces
- 1 large yellow bell pepper, cut into 1 ½-inch pieces
- 1 large red onion, cut into 1 ½-inch pieces
- 2 tbsp olive oil
- ½ cup soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- Juice of 1 lime
- Salt and freshly ground black pepper, to taste
- Wooden or metal skewers
- Optional: fresh cilantro or parsley for serving
Instructions
- Soak wooden skewers in water for at least 30 minutes to prevent burning.
- In a bowl, whisk together olive oil, soy sauce, honey, garlic, ginger, lime juice, salt, and pepper. Add chicken pieces and toss to coat. Marinate in the refrigerator for at least 2 hours (overnight for best flavor).
- Prepare pineapple, peppers, and onion, cutting into chunks.
- Preheat grill to medium-high heat.
- Thread chicken, pineapple, and veggies alternately onto skewers. Don’t overcrowd; leave small spaces for even cooking.
- Place skewers on the grill and cook for 12–15 minutes, turning every 3–4 minutes, until chicken is cooked through and has a nice char. Pineapple should caramelize at the edges.
- Transfer to a platter, sprinkle with fresh herbs if desired, and serve hot.
Notes
For extra tender chicken, marinate overnight. To customize, swap in your favorite veggies or use tofu for a vegetarian version. Leftovers are delicious in wraps, salads, or rice bowls.
