  • 1 ½ lbs boneless, skinless chicken breasts, cut into 1 ½-inch pieces
  • 1 fresh pineapple, peeled, cored, and cut into 1 ½-inch chunks
  • 1 large red bell pepper, cut into 1 ½-inch pieces
  • 1 large yellow bell pepper, cut into 1 ½-inch pieces
  • 1 large red onion, cut into 1 ½-inch pieces
  • 2 tbsp olive oil
  • ½ cup soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • Juice of 1 lime
  • Salt and freshly ground black pepper, to taste
  • Wooden or metal skewers
  • Optional: fresh cilantro or parsley for serving

Instructions

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. In a bowl, whisk together olive oil, soy sauce, honey, garlic, ginger, lime juice, salt, and pepper. Add chicken pieces and toss to coat. Marinate in the refrigerator for at least 2 hours (overnight for best flavor).
  3. Prepare pineapple, peppers, and onion, cutting into chunks.
  4. Preheat grill to medium-high heat.
  5. Thread chicken, pineapple, and veggies alternately onto skewers. Don’t overcrowd; leave small spaces for even cooking.
  6. Place skewers on the grill and cook for 12–15 minutes, turning every 3–4 minutes, until chicken is cooked through and has a nice char. Pineapple should caramelize at the edges.
  7. Transfer to a platter, sprinkle with fresh herbs if desired, and serve hot.

Notes

For extra tender chicken, marinate overnight. To customize, swap in your favorite veggies or use tofu for a vegetarian version. Leftovers are delicious in wraps, salads, or rice bowls.
