  • 1 tablespoon honey or maple syrup
  • 1/8 teaspoon nutmeg or lemon zest (optional)
  • Coconut oil or butter, for cooking
  • Fresh fruit, Greek yogurt, nuts, or honey, for topping

Instructions

  1. In a mixing bowl, whisk together eggs, Greek yogurt, almond milk, vanilla extract, cinnamon, honey, and nutmeg or lemon zest if using.
  2. Heat a nonstick pan over medium heat and add a bit of coconut oil or butter.
  3. Dip each slice of bread into the custard mixture, allowing it to soak briefly on both sides.
  4. Place the soaked bread onto the heated pan and cook for 2–3 minutes per side, until golden brown and crisp.
  5. Repeat with remaining slices, adding more oil or butter as needed.
  6. Serve warm with your favorite toppings such as fresh fruit, yogurt, nuts, or a drizzle of honey.
