Ingredients

  • 1 bone-in turkey breast (35 lbs)
  • 4 tablespoons softened butter or olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon lemon zest
  • 1 teaspoon paprika
  • 1 tablespoon chopped rosemary
  • 1 tablespoon chopped thyme
  • 1 tablespoon chopped sage
  • Salt and freshly cracked black pepper, to taste
  • 1 cup chicken broth or white wine
  • Optional: sliced onion, carrots, and celery for roasting base

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix butter or oil with garlic, lemon zest, paprika, rosemary, thyme, sage, salt, and pepper to create an herb rub.
  3. Pat turkey breast dry. Gently loosen the skin and rub half of the mixture underneath and the rest on top.
  4. Place turkey on a rack in a roasting pan. Add broth or wine to the bottom of the pan. Add vegetables if using.
  5. Roast uncovered for about 20 minutes per pound, or until internal temperature reaches 165°F (74°C). Tent with foil if browning too quickly.
  6. Let rest for 10–15 minutes before slicing. Serve with pan juices and your favorite sides.

Notes

You can brine the turkey for 8–12 hours for extra moisture. Leftovers are great for sandwiches, soups, or salads. Wrap well and freeze for up to 2 months.
