Ingredients

Instructions

  1. Place grated zucchini in a colander, sprinkle with salt, and let sit 10 minutes.
  2. Squeeze out as much liquid as possible using a clean towel or paper towels.
  3. In a bowl, whisk eggs, flour, Parmesan, green onions, garlic, and black pepper. Fold in zucchini until combined.
  4. Heat a thin layer of oil in a skillet over medium heat.
  5. Drop spoonfuls of batter into the pan and flatten gently with a spatula.
  6. Fry 2–3 minutes per side until deep golden and crisp. Transfer to a paper towel–lined plate.
  7. Serve immediately with your favorite dip (garlic-yogurt, lemon aioli, or tzatziki).

Notes

Drain well for maximum crispness; moisture is the enemy of crunchy fritters. Use hot oil and avoid overcrowding the pan. For gluten-free, swap flour for almond or chickpea flour.
