Ingredients

  • 1 block (7–8 oz) Greek feta cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1/4 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Black pepper, to taste
  • Fresh thyme or rosemary sprigs (optional)
  • Crusty bread or warm pita, for serving
  • Optional: 1 teaspoon honey, for drizzling

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place the block of feta in a small baking dish.
  3. Add cherry tomatoes, olives, and red onion around the feta.
  4. Drizzle everything with olive oil and sprinkle with garlic, oregano, red pepper flakes (if using), and black pepper.
  5. Add fresh thyme or rosemary sprigs if desired.
  6. Bake for 20 minutes, until the feta is golden and the tomatoes are blistered.
  7. Optional: drizzle with honey before serving.
  8. Serve warm with crusty bread or pita for dipping.

Notes

Assemble the dish ahead of time and bake just before serving. Add honey for a sweet-savory twist, or toss in chickpeas or roasted red peppers for variety.
