Ingredients
- 6 cups Rice Krispies cereal
- 1/2 cup (1 stick) unsalted butter
- 1 cup packed light brown sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon flaky sea salt (plus more for topping)
- 1 (10-ounce) bag mini marshmallows
Instructions
- Line a 9×13-inch baking pan with parchment paper.
- In a large pot over medium heat, melt butter. Add brown sugar and cook, stirring, until sugar dissolves and the mixture is bubbling and golden, about 3–4 minutes.
- Stir in heavy cream, vanilla extract, and sea salt. Let bubble for 1 minute, then reduce heat to low.
- Add marshmallows and stir gently until completely melted and smooth.
- Remove pot from heat. Quickly fold in Rice Krispies cereal until evenly coated. Do not overmix—just until combined for the best texture.
- Press the mixture lightly into the prepared pan with buttered hands or a spatula. Sprinkle extra sea salt on top, if desired.
- Let cool completely, then cut into bars and serve. Store in an airtight container for up to 3 days.
Notes
For variations, swirl in peanut butter or add chopped dark chocolate, sprinkles, or toasted pecans before pressing into the pan. Use gluten-free cereal and dairy-free ingredients for a friendly swap. Don’t press the mixture too firmly into the pan—gentle pressure keeps the bars soft and chewy.
