Ingredients

  • 6 bone-in, skinless chicken thighs
  • 1 medium onion, sliced
  • 4 garlic cloves, minced
  • 3 carrots, cut into chunks
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Juice of 1 lemon

Instructions

  1. Layer sliced onions and carrots at the bottom of the slow cooker.
  2. Season chicken thighs with salt, pepper, thyme, and rosemary.
  3. Place the chicken on top of the vegetables.
  4. Add minced garlic and pour in chicken broth and lemon juice.
  5. Drizzle olive oil over the top.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and fully cooked.
  7. Serve over rice, mashed potatoes, or with crusty bread. Spoon broth on top for extra flavor.

Notes

For deeper flavor, brown the chicken in olive oil before adding to the slow cooker. Add white wine or Dijon mustard for a French twist. Leftovers are perfect for sandwiches, wraps, or salads.
