Ingredients

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, thinly sliced
  • 1 cup snow peas
  • 1/2 cup baby corn (optional)
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil, divided
  • Salt and pepper to taste
  • Cooked jasmine or brown rice, for serving
  • Sesame seeds and sliced scallions, for garnish

Instructions

  1. In a small bowl, mix chicken with 1 tablespoon soy sauce, 1/2 teaspoon sesame oil, 1/2 teaspoon cornstarch, and a pinch of pepper. Let marinate for 15 minutes.
  2. In another bowl, whisk together remaining soy sauce, oyster sauce, brown sugar, cornstarch, and a splash of water to make the stir-fry sauce. Set aside.
  3. Heat 1 tablespoon oil in a large skillet or wok over high heat.
  4. Add chicken and cook for 2–3 minutes until lightly golden and cooked through. Remove and set aside.
  5. Add remaining oil to the pan. Stir in garlic and ginger until fragrant, about 30 seconds.
  6. Add carrots and broccoli, stirring for 2 minutes.
  7. Add bell pepper, snow peas, and baby corn. Stir-fry for another 2–3 minutes until crisp-tender.
  8. Return chicken to the pan. Pour in the sauce and stir constantly until everything is coated and sauce has thickened.
  9. Serve hot over rice, garnished with sesame seeds and scallions.

Notes

Swap chicken with tofu, shrimp, or beef for a twist. Add chili or sriracha if you like it spicy. Leftovers reheat beautifully in a hot pan.
