  • 2 cups fresh or frozen strawberries, hulled and sliced
  • 23 tablespoons honey or maple syrup (to taste)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons chia seeds
  • 4 slices sourdough or whole-grain bread
  • Butter or almond butter, for spreading (optional)

Instructions

  1. In a small saucepan, add strawberries and heat over medium until they begin to soften and release juices, about 5 minutes.
  2. Gently mash strawberries with a fork or potato masher until mostly smooth, leaving a few chunks if desired.
  3. Stir in honey (or maple syrup), lemon juice, and vanilla extract. Simmer for another 2 minutes.
  4. Reduce heat to low and stir in chia seeds. Cook for 1–2 more minutes, then remove from heat.
  5. Let jam cool for 10–15 minutes to thicken. Transfer to a jar and refrigerate for at least 30 minutes or overnight.
  6. Toast bread slices to desired crispness. Spread with butter or almond butter if using.
  7. Top each toast with a generous spoonful of chilled strawberry chia jam.
  8. Add desired toppings like fresh fruit, extra chia seeds, honey, or ricotta.
  9. Serve immediately and enjoy.

Notes

Jam keeps in the refrigerator for up to 10 days. For a smoother texture, blend the jam before adding chia seeds. Use different berries or add cinnamon for flavor variations.
