Ingredients

  • 1 cup fresh sweet corn kernels (or frozen)
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal

  • 1/2 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/4 cup fresh parsley (or cilantro)
  • 2 eggs
  • 1/2 cup milk
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Start by mixing your dry ingredients – flour, cornmeal, cumin, chili powder, garlic powder, and a pinch of salt and pepper in one bowl.
  2. In another bowl, whisk together eggs, milk, and lime juice, then add the fresh corn kernels.
  3. Slowly add the dry ingredients into the wet mixture, stirring just until combined (don’t overmix).
  4. Heat oil in a large skillet over medium heat. Spoon small amounts of batter into the pan, frying for about 3-4 minutes on each side until golden and crispy.
  5. Drain on paper towels to remove excess oil. Serve hot with a dipping sauce of your choice.

Notes

For best results, use fresh sweet corn or frozen corn instead of canned corn. Don’t overmix the batter to ensure light and crispy fritters. Make sure the oil is hot enough before frying to avoid greasy fritters.
