Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons olive oil, plus more for roasting
  • 1 clove garlic
  • 2 tablespoons lemon juice
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika, plus extra for garnish
  • Salt, to taste
  • Warm water, as needed
  • Assorted vegetables (cucumber, cherry tomatoes, roasted bell peppers)
  • Kalamata olives
  • Pita bread or pita chips
  • Optional toppings: feta cubes, marinated artichokes, herbed yogurt dip

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes with olive oil, salt, and cumin. Roast for 25 minutes or until caramelized and tender. Let cool slightly.
  3. In a food processor, combine roasted sweet potatoes, chickpeas, tahini, lemon juice, garlic, olive oil, and smoked paprika. Blend until smooth, adding warm water as needed for consistency.
  4. Taste and adjust seasoning. Transfer to a bowl and swirl the top with the back of a spoon. Drizzle with olive oil and sprinkle with smoked paprika.
  5. Arrange mezze platter: place hummus in center, then surround with veggies, olives, pita chips, and optional sides like feta or yogurt dip.
  6. Serve immediately or store components separately until ready to serve.

Notes

Customize your platter with seasonal vegetables or swap sweet potato for roasted carrots or beets. Hummus can be made up to 3 days in advance and stored in an airtight container.
