Description

A refreshing and nourishing tropical treat made with creamy chia pudding, fresh mango, tangy passionfruit, and a sprinkle of toasted coconut flakes.


Ingredients

  • 3 tablespoons chia seeds
  • 1 cup coconut milk (full-fat or light)
  • 12 tablespoons honey or maple syrup
  • 1 ripe mango, peeled and chopped into cubes
  • 1 passionfruit, pulp scooped out
  • 1/4 cup toasted coconut flakes

Instructions

  1. Combine chia seeds and coconut milk in a bowl or jar. Add honey or maple syrup for sweetness and stir to combine.
  2. Cover and refrigerate the mixture for at least 4 hours or overnight.
  3. Peel and chop the mango into cubes. Cut the passionfruit in half and scoop out the pulp.
  4. Once the chia pudding has set, layer it in a glass or jar starting with chia pudding, followed by mango cubes and passionfruit pulp.
  5. Repeat the layering process to create beautiful layers of pudding and fruit.
  6. Top with toasted coconut flakes and serve chilled. Enjoy!
