- 3 tablespoons chia seeds
- 1 cup coconut milk (full-fat or light)
- 1–2 tablespoons honey or maple syrup
- 1 ripe mango, peeled and chopped into cubes
- 1 passionfruit, pulp scooped out
- 1/4 cup toasted coconut flakes
Instructions
- Combine chia seeds and coconut milk in a bowl or jar. Add honey or maple syrup for sweetness and stir to combine.
- Cover and refrigerate the mixture for at least 4 hours or overnight.
- Peel and chop the mango into cubes. Cut the passionfruit in half and scoop out the pulp.
- Once the chia pudding has set, layer it in a glass or jar starting with chia pudding, followed by mango cubes and passionfruit pulp.
- Repeat the layering process to create beautiful layers of pudding and fruit.
- Top with toasted coconut flakes and serve chilled. Enjoy!
Notes
Customize with other tropical fruits like pineapple or papaya. For a creamier texture, you can add a dollop of Greek yogurt.
