Ingredients

  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 2 ripe avocados, diced
  • 1/3 cup fresh mint leaves, torn by hand
  • 23 tablespoons freshly squeezed lime juice (about 12 limes)
  • 1/4 teaspoon sea salt (plus more to taste)
  • Optional add-ins: crumbled feta cheese, thinly sliced cucumber, red onion, baby arugula, jalapeño, toasted seeds, extra virgin olive oil

Instructions

  1. Spread watermelon cubes in a large mixing bowl. Sprinkle with a pinch of sea salt and let sit for a few minutes.
  2. Add diced avocado to the bowl, keeping pieces similar in size to the watermelon.
  3. Drizzle fresh lime juice over the watermelon and avocado. Gently toss to coat, making sure to cover the avocado to prevent browning.
  4. Scatter torn mint leaves over the salad, reserving a few for garnish.
  5. Using clean hands or a wide spatula, gently fold everything together until just mixed. Be careful not to mash the avocado.
  6. Taste and adjust with more lime juice, mint, or salt if desired.
  7. Serve immediately for best texture, or chill for up to 1 hour before serving. Enjoy!
